SUMMARY:Minneapolis Climate Week: Plant Protein Potluck
DESCRIPTION:RSVP for this event via Luma \nDid you know? Plant-based protein sources have a significantly lower carbon footprints than animal-based protein sources. Even the highest-impact bean or tofu emits less than the lowest-impact chicken\, pork\, or beef! \nPlants come with other pros: Beans fix nitrogen in the soil\, reducing the need for fertilizers. Tree nuts are one of the few foods that can be carbon-negative\, since they grow on carbon-storing trees. \nLast year\, in 2025\, the meat giant Tyson lost a lawsuit for claiming that beef can be “climate-smart” and “net zero”. They have to pay damages\, but the misinformation is still out there. At this potluck\, we aim to promote and consume protein that is actually environmentally-friendly: beans\, lentils\, nuts\, soybeans\, and grains! \nWe’ll explore plant-based protein sources. Bring a plant-based dish featuring beans\, nuts\, seeds\, lentils\, seitan\, or soy. Please also bring a list of ingredients to help anyone with dietary restrictions. \nYou’re welcome whether it’s your first time opening a can of beans or if you’re an experienced chef. Potlucks are a great way to try a new recipe in a low-risk way. Here’s a list of ideas and links to try: \n\n\nBean Chili \nBean tacos \n\nLentil Ragu \n\n\nChana Masala \n\nBean Enchiladas\n\nCashew-Based Mac \n\n\nMediterranean Chickpea Salad \n\n\nKik Alicha (Ethiopian Split Pea Stew) \n\n\nThai Tofu Curry \n\n\nWalnut Tacos \n\n\nSoy Curl Tacos \n\n\nCreamy White Beans \n\n\nGarbanzo Orzo Soup \n\n\nRed Lentil Dahl \n\n\nBlack Bean Brownies \n\n\nChocolate Mousse \n\n\n***Space is limited. Please check to make sure you can come before you RSVP\, and reach out via Luma if you can’t make it.*** \nWe’ll use ceramic plates and metal silverware at the potluck so as to not pollute our environment. If you can stay afterwards to help hand-wash dishes\, thank you! \nSee you at the potluck! \nRead more about the carbon footprint of our food via these articles from the BBC. \nBy registering for this event\, you agree to share your registration information with the organizers of Minneapolis Climate Week.

SUMMARY:Duluth Vegan Quarterly Potluck - January
DESCRIPTION:Part of the spread of food at the last Duluth potluck. \nIf you are interested in eating yummy vegan food\, need some new recipes to add to your menu\, and want to have great conversations with like-minded people\, this group is for you! \nEach potluck\, we make dishes with a specific theme. The theme for October will be “a family recipe” — something you’ve been making a while\, that comes from your family or has become part of your family traditions! Prepare a main dish\, side dish\, dessert\, or appetizer that’s part of your family story for the potluck. \nYour dish should not contain any meat\, eggs\, dairy\, fish\, butter\, honey\, or derivatives of these products. \nPlease bring the recipe or the list of ingredients to share\, and please bring a reusable plate to cut down on waste. \nWe will meet in the youth room of Salem Covenant Church – 339 North 59th Ave. W in Duluth. There is plenty of parking in the lot. Feel free to bring your veg-friendly friends and family! \nThis group is sponsored by Compassionate Action for Animals and is a welcoming and non-judgmental group.
